Incompatibility in Food Ayurveda, an ancient holistic science of healing, oers a logical and scienticapproach for determining correct diet based upon an individual's constitution. Vata,Pitta and Kapha; the tridosha, are the elements !hich comprise individualconstitution. his approach is #uite dierent from the $traditional$ vie! of a balanceddiet; vi%., eating daily from the basic food groups; meat, dairy, fruit, grains andvegetables. According to Ayurvedic literature, such a scheme is insu&cient to lead usto the path of good health. n the Ayurvedic literature there are ve types of nutritional disorders( ).*uantitative dietary deciency. his includes undernutrition due to insu&cientfood, and even starvation.+.*ualitative dietary deciency. his includes !rong food combination !hich resultsin malnutrition, toic condition and lac- of essential nutrients..*ualitative and #uantitative overnutrition. his includes emotional overeating!hich can result in obesity and/or high cholesterol !hich can lead tohypertension, heart attac-s or paralysis.0. oins in food. 1ertain foods and food combinations lead to toemia and to certaindigestive disorder. 2.3oods not suitable to one's constitution may aect natural resistance and causedisease.  hese ve factors are closely connected to the strength of agni 4the gastric re5.  here are four types of agni( VISHAMA AGNI  ( 6ue to vata dosha the gastric re becomes vitiated, causingirregular appetite, indigestion and gases. 7motionally this can result in aniety, insecurity, fear, and neurological or mental problems. TIKSHNA AGNI  ( Pitta dosha is responsible for this type of agni disorder. t may causehypermetabolism, hyperacidity, heartburn and hypoglycemia leading to in8ammatorydiseases. MANDA AGNI  ( his is due to an ecess -apha condition, leading to slo! metabolism, over!eight, allergies and congestive diseases. SAMA AGNI  ( his type of agni is the result of balanced tridosha. A person havingthis type of agni can eat almost any type of food !ithout di&culty. 6igestion,absorption and elimination are all normal.   he nutritionist should give consideration to these types of agni !hen ma-ingsuggestions concerning diet. According to Ayurveda, every food has its o!n taste 4rasa5, a heating or coolingenergy 4virya5 and postdigestive eect 4vipa-5. 9hen t!o or three dierent foodsubstances of dierent taste, energy and postdigestive eect are combined togetheragni can become overloaded inhibiting the en%yme system and resulting in productionof toins in the system. 9hile it is true that an individual's agni largely determinesho! !ell or poorly food is digested, food combinations are also of great importance.9hen foods, 4proteins, carbohydrates and fats5 having dierent attributes, tastes, 1  heating or cooling properties, and postdigestive eects are eaten together, agni !illbe slo!ed do!n. he foods can then remain in the stomach for seven to eight hours.  hese same foods, if eaten separately might !ell stimulate agni, be digested more#uic-ly and even help to burn ama.   hus, according to Ayurveda, one should eat according to one's constitution and ta-efruits, starches, proteins and fats separately at dierent times of the day. 1ombiningfoods improperly can produce indigestion, fermentation, putrefaction and gasformation. his condition, if prolonged, can lead to toemia and disease comple. 3oreample, eating bananas !ith mil- can diminish agni, change the intestinal 8oraproducing toins and may cause sinus congestion, cold, cough and allergies. Some Incompatibilities ã Avoid ta-ing mil- or yogurt !ith sour or citrus fruits. ã Avoid eating fruits together !ith potatoes or other starchy foods. 3ructose 4andother sugars5 is digested #uic-ly, !hereas starch ta-es #uite some time. n thiscase the sugar !ould not be properly digested. ã Avoid eating melons and grains together. :elons digest #uic-ly !hereas grainsta-e more time. his combination !ill upset the stomach. :elons should be eatenalone or left alone. ã oney should never be coo-ed. oney digests slo!ly !hen coo-ed and themolecules become a nonhomogeni%ed glue !hich adheres to mucous membranesand clogs subtle channels, producing toins. <ncoo-ed honey is nectar. 1oo-edhoney is poison. ã 6o not eat meat protein and mil- protein together. :eat is heating and mil- iscooling so they counteract one another, disturb agni and produce ama. ã :il- and melons should not be eaten together. =oth are cooling, but mil- is laativeand melon is diuretic, and mil- re#uires more time for digestion. :oreover theaction of hydrochloric acid in the stomach causes the mil- to curdle. 3or this reasonAyurveda advises against ta-ing mil- !ith sour fruits, yogurt, sour cream, cheese, and sh. Ayurveda insists that iced !ater should not be drun- during or after a meal as it slo!sagni and digestion. >mall sips of !arm !ater ta-en during the meal serves to aiddigestion. 9hile eating one should properly masticate the food in order to soften itand ensure that it is thoroughly mied !ith saliva. f desired, one can nish a meal bydrin-ing a cup of lassi 4or ta-ram5. his can be made by blending four teaspoons of yogurt !ith t!o pinches of ginger and cumin po!der in one cup of !ater. 9hen eating, only one third of the capacity of the stomach should be lled !ith food, one third !ith li#uid and one third should be left empty. his !ill aid in properdigestion and also promotes mental clarity.
