   Pork Kaldereta Recipe Serves: 5   Ingredients    2 lbs. Pork, cubed    1 (15 oz.) can tomato sauce    ¾ cup green olives    1 medium red bell pepper, sliced    1 medium green bell pepper, sliced    2 medium baking potatoes, cut into large cubes    2 medium carrots, sliced diagonally    1 medium yellow onion, sliced    2 teaspoons minced garlic    32 oz. beef broth    ½ cup liver spread    3 tablespoons cooking oil    Salt and pepper to taste Instructions 1.   Heat the oil in a cooking pot. 2.   Once the oil is hot, saute the garlic and onion. 3.   Add the pork. Stir and cook for for 5 minutes or until the color turns light to medium brown. 4.   Pour-in the tomato sauce and beef broth. Let boil. Cover and simmer for 60 minutes. 5.   Add the liver spread. Stir and cook for 3 minutes. 6.   Put-in the carrots and potatoes. Cover and cook for 8 to 10 minutes. 7.   Add the olives and bell peppers. Cook covered for 8 minutes. 8.   Add salt and pepper to taste. 9.   Turn-off the heat. Transfer to a serving plate. 10.   Serve. Share and enjoy! Fiesta Menudo Serves: 4 Ingredients    1 lb. pork, sliced into small pieces    ¼ lb. pork liver, diced    4 pieces hotdogs, sliced crosswise    1 (8 oz.) can tomato sauce    ¼ cup raisins    1 Knorr pork cube    1 medium carrot, cubed    1 medium potato, cubed    1 medium onion, chopped    2 teaspoons minced garlic    1 ½ cups water    4 tablespoons cooking oil    1 teaspoon white sugar    Salt and ground black pepper to taste Instructions 1.   Heat 2 tablespoons of cooking oil in a pot. 2.   Once the oil gets hot, sauté half of the onion until it gets soft. Add the liver. Continue to cook for 2 to 3 minutes. Remove from the pot and set aside. 3.   On the same pot, heat the remaining oil. Sauté the onion and garlic; add the sliced pork. Continue to cook in medium heat while stirring for 5 to 10 minutes. 4.   Add the hotdogs. Cook for 2 minutes. 5.   Pour the tomato sauce in the pot. Stir. Add water. Let boil. 6.   Put the raisins and beef cube in the pot. Stir. Cover and cook in low heat for 40 to 45 minutes. 7.   Add the sautéed liver. Cover and cook for 5 minutes. 8.   Add the carrot and potato. Stir, cover, and cook for 10 to 12 minutes in medium heat. 9.   Add sugar and season with salt and pepper. 10.   Transfer to a serving plate. 11.   Serve. Share and enjoy!   Pork and Potato Stew Recipe Serves: 4 Ingredients    2 lbs. pork, sliced into cubes    ½ cup all-purpose flour    3 tablespoons cooking oil    1 medium yellow onion, chopped    ½ cup chopped celery stalk    1 teaspoon dried thyme    1 teaspoon dried oregano    3 pieces medium plum tomato, wedged    2 large baking potato, sliced into cubes    2 cups chicken stock.    Salt and ground black pepper to taste Instructions 1.   Heat the cooking oil in a cooking pot. 2.   Dredge the pork slices in all-purpose flour. Pan Fry until the color turns medium brown. 3.   Add onion, tomato, and celery. Stir and cook for 5 minutes in medium heat. 4.   Add thyme and oregano. 5.   Pour-in the chicken stock; let boil. Cover and simmer for 45 minutes while stirring every 10 minutes. 6.   Add the potato. Cook for 10 to 12 minutes in medium heat. 7.   Once the texture thickens, add salt and pepper to taste. 8.   Transfer to a serving plate. 9.   Serve. Share and enjoy!
