  - Joy of Cooking - http://www.samai.in/recipes - Mutton Biryani Posted By komala On September 6, 2009 @ 3:43 pm In Non-veg,Rice | 6 Comments  [1] Mutton BiryaniIngredients: Basmati rice – 1 cupOil and GheeCumin seeds – 1/2 tspnBay leaf – 1 or 2Cinnamon – a small stickCloves – 2Kalpasi (Black stone flower) – a small pieceOnion – 1/2Green Chili – 2Mint leaves – 1/2 cupCoriander leaves – 1/2 cupCoconut milk -3/4 cupLemon juice – 1/2 tspnSalt – to tasteFry and make a coarse paste of:Onion – 1/2Tomato – 2 Mint leaves – 1/2 cupCoriander leaves – 1/2 cupFor marination:Mutton – 1/4 kgGinger garlic paste – 1½ tspnTurmeric powder – 1/4 tspnChili powder – 1/2 to 1 tspnCoriander powder – 1½ tspnCumin powder – 1 tspnGaram masala powder – make a fine powder of (Saunf- 1/2 tspn, Cardamom – 2,Cinnamon – 1 inch stick, Cloves – 3, Star anise – 1/4)Curd – 3 tspnSalt – to taste Joy of Cooking » Mutton Biryani » Printhttp://www.samai.in/recipes/rice-saadham-saatham-koodu-recipes/chet...1 of 208-02-2014 12:04  Recipe: Marinate the above given ingredients for 20 to 30minutes. Then pressure cook them for 3whistles by adding little water. Little water is enough since the mutton pieces also releasessome moisture.1.Heat Oil in a pan. Add half of a Onion and fry till they are light brown. Then add Tomatoand fry for 1 or 2 minutes. Add Mint and Coriander leaves. Remove from heat and grindthem into a coarse paste.2.Soak Basmati rice for 10 minutes.3.Heat Ghee in a pressure cooker and add Cumin seeds, Cinnamon stick, Cloves, Bay leaf,Kalpasi. Once it starts spluttering, add Onion and fry till they are golden brown.4.Add the ground paste(from step 2) and fry for 2 to 3 minutes. Then add cooked muttonpieces, Mint leaves and Coriander leaves. Fry them for a minute or two.5.Add Basmati rice, Coconut milk, Mutton stock (the water which you used to cook mutton),Water, Lemon juice and Salt. Mutton stock, Coconut milk and Water altogether is 1½cups. 6.Pressure cook for 2 to 3 whistles. Once the pressure is released, open the cooker, mix welland serve. Delicious Mutton Biryani is ready to eat now.7.
